yup, a 'copt' means an egyptian.
a 'coptic Christian' means any egyptian Christian, but usually refers to orthodox Christians.
if a muslim calls himself a 'copt' he could be referring to his native egyptian heritage (pagan or Christian) and emphasizing the fact that he is not originally an arab.

because muslims believe the quran was revealed in arabic, they tend to favour arabic culture as well as the arabic language, but not all muslims identify so strongly with arabs, so they can call themselves 'coptic' if they want. maybe they don't all want to wipe out our culture completely!
