pantocrator hand symbol

i have never seen this symbol before ive only seen it in this ancient coptic icon in st anthonys monastery.
i have also seen abouna doing this sighn of the cross over the blood during the institution narrative[with this hand signal

what does the symbol represent?

    I am not sure but I think it stands "IC XC" (Greek letters for "Jesus Christ") -- the first finger making the I, the curved middle finger forming the C, the crossed ring finger and thumb forming the X, and the pinky finger forming the second C.

    Yes, this is correct. It is called a Christogram, it was used very heavily in the Early Church and still very much so among our Eastern brothers.
